Having long worked with Sergio Herman, Orlando David has developed a vibrant style of cooking. He might, for example, serve herring on top of a potato and apple salad, accompanied by citrus gel, sea banana and pickled shallot. At R21, the dishes are exciting and and the sommelier has a keen understanding of the cuisine and complements it with judicious wine pairings.
