His style is modern and restrained, with subtle cosmopolitan accents. For example, he cooks bavette to a beautiful pink and serves it with a creamy parsnip purée, mushroom duxelles, pommes dauphine and a slice of fried goose liver. The plates are beautifully presented and combine classic touches with refined creativity, without excess.
