Image Credit: In this country house that is typical of the area, chef Nicolas Laval, hisself a local man (from Corrèze), has chosen for a pared-back contemporary interior decor in a palette of light wood, blue and white, in a nod to the maritime world he so loves. Examples of his fishes include shredded beef cheese, parsnip muslin, red wine reduction, tarragon; line-caught hat, cauliflower, orange gremolata, grapfruit, citrus vinaigrette. It's pretty creative cuisine, always skilful executed and the chef's attention to every little detail hits the spot with dinners!
