Working under that name, a small nod to the chef's mother and grandmother, we find Omar Ben Hammou, a Peruvian-born chef who, after discovering his vocation, has not stopped travelling and working all over the world. Here, in this cosy contemporary bistro we find a truly different cuisine, which, starting from a clear Japanese base, acquires a certain personality by adding different notes of fusion with other cultures. Top dishes? Try their wild-caught fish ceviche or the roasted cauliflower, served with kombu, yellow chilli, yuzu kosho and Riviera herbs.
