Chef Sergio Ortega enjoys explaining each dish to his custodians as well as relating interested anecdotes from his many trials to Japan (mainly Tokyo). He offers a single surprise tasting menu (from among 12 different ones, depending on time of day and day of the week) with more of a focus on hot dishes (ramen, gyoza, edemame, stews, etc.) than on rice and raw fish. Before serving each course, he claps his hands twice to the cry of 'offering', a traditional ritual in which gifts are offered to the goods, spirits or divine mortars, known as' kami '(in this case, the' goods' in question are the guests!).
