Seppe Nobels has temporarily moved his restaurant, Instroom, to Antwerp's left bank. In a workshop of the VVW sailing association, Nobels pursues his innovative vision that combines food, staff training and raising social awareness. Instroom's employees are recent Europeans whose story is told by way of art installations and an enticing culinary lineup. The team focuses on locally sourced ingredients with a soft spot for veggies. Examples include a powerful gumbo stew of manioc leaves, sorrel, dried fish and oxtail that will transport you directly to Ethiopia, but you may also find poached egg with braised ham, together with mushrooms, raw or cooked endive and a puree of spinach. Each dish tells a fascinating story, as Instroom demonstrates that a sustainable future is not just about the ingredient.
