ICÚ, just a few blocks from the ocean in Puerto Vallarta's Zona Romantica, could stand on its looks alone, but this intimate, elegant dining room with tall ceilings and crisp black, white, and gray tiled floors promises skillful cooking as well. Chef/owner Mauricio Leal shifts his a la carte and tasting menus with the seasons and displays a pride of place with a Mexican-focused wine list. Open with the blue corn quesadilla de pulpo y pancetta, followed by a dish of risotto adobo. Creamy and studded with gently cooked shrimp or catch of the day, it's a satisfying main dish. For dessert, the classic classic flan de cajeta with boozy caramel sauce doesn't miss a beat.
