The updated traditional cuisine, based around seasonal, locally sourced ingredients, is also heavily focused on the sea without neglecting the country's iconic acorn-fed Iberian pigs. On the à la carte, which is complemented by two tasting menus (Esencia and Camino del Sur), we particularly enjoyed the red tuna tartare with a white almond cream sauce, young salad leaves and mango.
