The two chefs in charge, Álvaro Gragera and Carlos Fraguas, propose a cuisine with Japanese roots based on the excellent products of the Bay of Biscay and Mediterranean recipes, through a small menu of bite-size nibbles (here the nigiris stand out for their technique, size and flavour) and an Omakase menu designed for sharing. They age the fish themselves!
