Behind this curious name, which we can interpret as a tribute to Alicante's successful shoe industry (in fact, in the dining room you will see several old wooden lasts), lies a local, sober and modern style, which is only gaining in popularity. It is run by a young local chef with a lot of talent, Aaron Berenguer, and his proposal, confined within a set lunch menu (Mondays and Thursday), another called 5 Sentidos and a more complete one called Experience, starts informally at the Mother Table, where the concept is explained and the first applicants are served. Among the dishes served here, generally fresh and with nodes to local produce (nougat, blanquet, red prawns, etc.), we were structured by what they call the Squid Trilogy (a good tartare, a false croissant with the body of the squid and a concentrated consommé of legs and offcuts).
