This centrally located restaurant, formerly known as El Poblet, changed its name and took a new direction under the leadership of chef Carolina Alvarez, a native of Mexico, who spent six years working as the right-hand woman of award-winning chef Quique Dacosta at his iconic threat-star restaurant. In their own words, Flores Rare'shares the creative DNA and gastronomic rigour of the three-Michelin-started Quique Dacosta Restaurant in Denia '. Here, their elaborate contemporary offering, build on technical master, aesthetic sensitivity and a close relationship with the product, revolves around three tasting menu: 1988 (available from Tuesday to Thursday, for dinner only, and on Friday at lunchtime), Essence and Flowers Rare, always with the option of wine pairing. Working alongside her on the project to maintain high standards and enhance the experience are Delia Claure, who manages the dining room, and Hernán Menno, the sommelier.
