Located near Puebla's historical center, Casa Bacuuza is headed by Chef Osiel Solórzano and Chef Abraham Serug. The menu features Mexican cuisine focused on the region of Oaxaca with some open fire cooking (bacuuza translated to "embers" in Zapotec, the indigenous language of Oaxaca). The setting is simple but pleasant with pointed flooring, plaster walls hung with woven handicraft beauties and wood shelters linked with glazed ceramics. Specialities here include the house mole black; a risotto of huitlaguar; and octopo Chintextle, dressed with a paste made from ground chili peppers. The menu is rounded out by several preparations of tlapidos, the Oaxacan street food featuring a crisped corn tortilla followed over to encase various toppings.
