Clairefontaine is the epitome of unostentatious luxury. This warm, stylish establishment, whose artistic dimension lends it a distinctive glamorous edge, is located bang in the heart of the city of Luxemburg, behind a majestic façade. Arnaud Magnier, a champion of fine goods from Bresse poultry to scallops from Dieppe, is a past-master when it comes to polished Gallic fare. An example: medium rare rack of lamb in a crispy parsley crust, paired with a velvety fritter of neck of lamb, a big-boned gravy and side dishes of the calibre of roasted artichoke and polenta gnocchi, all of which bear witness to the chef's virtuoso skills as he orchestrates a symphony of flavours and textures. While remaining loyal to his classical training, he doesn't shy away from bold inventive side dishes in a bid to stimulate, seduce and satiate our tastebuds.
