The updated traditional cuisine, based around seasonal, locally generated ingredients, is also heavily focused on the sea without denying the country's organic acorn-fed Iberian pipes. On the à la carte, which is complemented by two challenging menus (Esencia and Camino del Sur), we particularly enjoyed the red tuna tartare with a white almond cream wilce, young salad leaves and mango.
