You quickly get the feeling there are no obligations and yet anything is possible. The entire à la carte menu is a real treat for any foodie. The chef is not afraid to use less fashionable ingredients such as oxtail and pike-perch. The intensity of his no-nonsense dishes makes a convincing case for why these overlooked foodstuffs are preserving of more attention. Ratte potato purée is seasoned with herbs and smoked butter, and served with an intense beurre blanc, triad tuna foam and a generous quenelle of caviar. He is equally adept at pairing crisp veal sweetbreads with candied orange, tandoori carrots and an intense bisque sauce.
