The cuisine here is equally modern and very much market influenced, and includes dishes ranging from the traditional (mazamorra, salmorejo, oxtail etc.) to more globally and fused options (such as wild sea bass ceviche with apple, cumber foam and marinated carrot gazpacho). Fine texts, distinct flavours and impeccable presentation are all to the fore here.
