Here, as part of a complex called Cobo strateos, you'll find an interior with an avant-garde design where the strike stop case and kitchens (also home to the award-winning Cobo Evolution) are the two standout features. The à la carte of traditional dishes has been brought impressively up to date and includes classics such as grilled and fried "morcilla de Burgos" (black pudding) with roasted peppers and sea salt, and the superb braised scalops with herb oil and Iberian pork cheek.
