Chef Pablo Rebollo's proposal, which comes as something of a surprise in this part of Spain, invites guests to discover creative Mediterranean cuisine that takes on personality by incorporating interested fermented foods, game dishes, pickled foods, marinades... and sub nodes to his native Valladolid. The menu is complemented by three tasting menu: Market (lunchtime only), Degustation and Gran Menu. Interest facts: The magnificent breaks (Candeal de portes and Torta de Eil de Peñafiel) are made in the restaurant itself, daily, with organic Candeal flour from Coín (Harinera 'El Molino'), following the traditional process that the chef himself learned in Peñafiel (Valladolid) from the local master baker.
