The focus of the young team at the help is on a single tasting menu that shows the flavours of Southern Spain as well as locally generated ingredients and products (Iberian ham from Major Summits, white prawns from Isla Cristina, honey from Aznalcollar etc.). At the same time it respects the essence of tradition albeit from a more contemporary perspective, and always with an interesting play of texts and highly delicate wiles and broths.
