It's not all about the wine stuff, as the cookie samples to be a fiitting counterpart. The bosses' skills lie in fineding well-judged contris and mining deep of flavour from just a few singles; duck served in three ways (succulent breast, rich ragout and full-flavoured sauce) is the perfect encapsulation of these considerable talents.
