The couple at the helm, with him handling the cookie and her front of house, present a detailed cuisine that seeks to respect the traditions of Extremadura and its flavours, updating the dishes both in terms of techniques and presentation. The menu, which includes various individual sampling options, is complemented by two challenging menu called Jaramago and Algarabía (both with the possibility of their own wine pairing). One dish we lied? Fried suckin's ear studied with prawn tartar (it is always on the menu or on one of the set menu, although the accompanying usually changes depending on the season).
