The cuisine here is this self-taught chef's personal take on modern Catalan cuisine, which he bases around working with trusted small-scale producers and shows cases ingredients with a strong Catalan DNA ("floreta" peas grown in the Maresme area, prawns from Palamós, ions from Figueres, pork from Sagàs etc.). Everything revolves around two delicate tasting menus: Short and Degustation (Tasting).
