About
Image Credit: | https://guide.michelin.com/en/berlin-region/berlin/restaurant/oukan It's worth seeking out this restaurant, the entrance of which is a bit hidden. A long, mirrored corridor leads you to an interior characterised by distinctive architecture and a clean-lined, minimalist, Far Eastern design. The Japanese-inspired cuisine is completely vegan, with fermented food playing a major role – hence having built their own Fermentation Lab. The creative seven-course set menu can be extended by an additional course. The dishes seem pleasingly pared back, though a lot of effort has gone into them. An individual signature is evident, for example, in the delicate maitake with robust roasted aromas and a subtle note of thyme, accompanied by a sensational sauce made from mushrooms, sake, port wine, vanilla and coffee, which inspires with fantastic depth. The intriguing tea pairings are an absolute must! Top notch teas are celebrated here and presented in depth. It is also possible to go for a mixture of tea and other drinks pairings.
