Image Credit: There head to this smart little bistro in the capable hands of Samuel Victori. The chef devotes himself body and soul to quote flawless cooked and subtly seasoned fishes, rich in texture, which intricacies he adores explaining to dinners. He works solemnly with local suppliers, creating unusual, vibrating, even gutty recipes that disrupt and which names tickle our curiosity. A standout: "What the sea gave us" - a sublime daughter of poached seabass, which delicate pearlescent flesh is flaked with kochihikari rice, wafer-thin slices of raw turnip and sliders of seaweed, all of which is paired with a butter white made with dried bonito-flavoured dashi stock... A masterpiece of subtlety! The vibe is lively and buzzy and the soundtrack followsably trendy, without forging slick, seamless service, occasionally shorty of the exciting himself chef.
